Recipes To Try

I love food. Mexican, Italian, Indian, Chinese, even English!

Off and on, I have managed to make some sort of plans in advance, of what we'd be eating. I've tried once a month cooking, and never seemed to get the hang of it well enough. I have also tried cooking for two weeks, which fared a little better. But now I'm down to weekly planning, and daily cooking. It's not where I'd like to be, but it is what it is. I'm in a new city and trying to get the hang of the food situation can be daunting enough without pressure from myself.

So without further ado: Recipes I'd like to try this month, with links.


Cauliflower Vegetable Rice Paella - In Spain, this dish is popular, and can be found most anywhere. I'm excited to try it! 


Garden Fresh Grilled Ratatouille -  Wouldn't it be fun to watch the cartoon named after this dish? I think we may.

Vegetarian Korma - I LOVE Indian. Have I mentioned that yet?? One of our more memorable dates was at an Indian restaurant in Prescott, AZ.

Spicy Lentils with Sweet Potatoes and Kale - I'll sub out the kale and give my men spinach, and keep the kale for myself! ;) 

Korean Inspired Black Eyed Peas with Kale - again, spinach for the men folks, and kale for me! 

Baked Falafel - My son loved the falafel balls we had a few months ago, and I'd love to try my hand at them myself. I love them as well!  This link also has two very yummy sounding dressings to go with.

Veggie Stuffed Mexican Bell Peppers

Mac With Greens, Lemon and Parmesan - we have to sub out the wheat pasta for a gluten/corn free one, but I'm super excited for this. I love lemon these days. :)

Cheesy Zucchini Bake - I have to say...I love me some zucchini. I will have to sub out some of these ingredients as well, but that's okay. I love being creative. Most of the time!!


Well thats it....though I'm sure I will try others. I'll update this as I can, and post what we thought of them. :-)

  1. Pinterest is full of recipes waiting on me to try them. I even made a page on my blog to share them with others. Then I quit testing them. LOL

  2. LOL I stopped adding recipes to pinterest. I've edited them. And now I hope to actually try them, one at a time. :-) We'll see how this goes!
