Tomato Basil Chicken

I jumped back on the meal planning wagon for this month! I had a few things I wanted to keep in mind as I looked for meals.
Keep it simple.
Keep it gluten, corn, pork and mostly dairy free.
Keep it inexpensive.
Keep it within the realm of our tastes.

So I started a Pinterest board for the monthly menu. Is Pinterest not awesome?! :)

So I planned something for every day of the week, and made a rotation. For example:

Monday - meatless
Tuesday - chicken
Wednesday - meatless
Thursday - meatless
Friday - pizza
Satuerday - beef
Sunday - crockpot

That helped tremendously in the whole planning process. Also keeping less meat based meals means for a leaner grocery bill! ;) Which make me happy.

So anyways, what we had today:
Tomato Basil Chicken

I couldn't really find a recipe, but I saw a photo. I went off of that.


1 chicken breast, sliced and cut in half.
2 pats of real butter
4 green onions, chopped
1/2 red onion, chopped
3 tomatoes, cubed
1 green bell pepper, diced
Black pepper
garlic salt
2 tablespoons dried basil (one bunch fresh)
2-3 med potatoes*

Cook everything together, minus the chicken.
Remove from pan, and allow to cool a little.
Cook chicken.
While chicken is cooking, roughly puree the cooked veggies.
 Cut up the potatoes, use half the veggie puree and mix in, with a little butter.
Put the other half into the pan with the cooked chicken. Allow to simmer for 5 minutes.

Plate up and eat! :)

*I used my crockpot to cook my potatoes so no heat in the house.
 
I didn't use pasta, as the picture suggests, nor did I use olive oil. I choose not to cook my olive oil, but that is of course, up to you! Butter lends a flavor we love. :)
